Your wedding cake doesn’t have to be white!

I haven’t always been a wedding cake designer, but I have always had a love for cooking, baking and art. I was brought up in a family where my mum was a keen cook and some of my earliest memories are of whipping up butter and sugar and dolloping out cake mix (with half of it ending up on the floor). At the same time, my dad had picked up a paint brush and was creating landscapes in his studio. Through a combination of nature and nurture I combined both of my parent’s passions and became a cake designer.

After doing something boring for 20 years, professional cake making was an itch that no matter how much cream I applied, needed scratching, and I took the plunge in 2018 to work at Simon’s Bakery fulltime.

As with any other creative profession, it takes time to find a style that is something you feel comfortable with and is an expression of your own personality. For me, I definitely lean into my love for abstract art, brutalist architecture, modern minimal design and bold colouring – I’m a firm believer that a wedding cake doesn’t have to white!

No fondant or sugar flowers!

I work with ganache and creamy Swiss meringue buttercream – no fondant or sugar flowers here I’m afraid – to create modern wedding cake designs that are characterised by a clean and precise finish and super sharp edges. On this canvas, I can then add colour and a contrast of texture and shapes using moulded wafer paper and chocolate to create a bespoke wedding cake unique to you.
I always encourage couples to be adventurous and step out of their comfort zone in their design aspirations, and love nothing more than being able to guide clients down a design path that they may not have considered before. I want every wedding cake that make to have the ‘wow!’ factor and really stand out from the cookie-cutter crowd and leaving a lasting impression on you and your guests.

A wedding cake that will taste as good as it looks.

Taste is just as important as how the cake looks, and I draw on years of cooking and baking experience to create exciting modern wedding cake flavours. How about a chocolate chip cake made with browned butter to give it a delicious caramel flavour, paired with a rich bourbon salted caramel and roasted peach help lift the flavours and add some tartness? Or perhaps I can tempt you with a light and fruity hummingbird cake made with banana, pineapple and pecan, delicately spiced with cardamom and cinnamon and paired with caramelised coconut and pineapple curd? If you have something special in mind, I love creating ‘off-menu’ flavours too.
